Loaded Potato Mini Bites

This is a simple yet delicious party appetizer recipe that everyone asks me for.


1 Package bacon (you can use turkey bacon here if you’re not a fan of pork)

1 bag small red potatos (the smallest ones you can find)

1/2 cup Sour Cream

1/4 cup crumbled goat cheese

1/2 cup freshly shredded Parmesan cheese off the block

1 cup freshly chopped green onion

Avocado spray oil/ or olive oil

Seasoned salt to taste


Cook your bacon thoroughly, pat off grease, and then crumble up the pieces

Oven to 450*F

Cut potatos in half and place on baking sheet with middle facing up, lightly spray potatos with oil.

Bake in oven for about 25 minutes (check a few minutes before to ensure they do not burn)

Once the potatos look golden brown, remove from oven and let cool.. (they should be tender enough a fork can pass through them with no issue)

Mix the goat cheese, sour cream, bacon bits, green onion, parmasan cheese and salt in a large bowl.

Once the potatos are cooled, take a spoonful of goat cheese mixture and top each potato half.
